Since you are doing chicken in the starter, how about some sort of fish? For a low carb side, I really like yellow squash, zucchini, shallots, garlic, red bell pepper and carrots sauteed together. It's nice and colorful, and very tasty!

went meatballs woith a homemade tomato and garlic sauce, roasted carrots and a parnsip/cauliflower mash

the starter was the winner, wasn't really happy with the tomato sauce

So Ill soon be immigrating and living on my own for the first time all at once. Made me realize I really need to learn to cook for myself. I really don't have to in my current life. I mean I can make a steak, I can put chips in the air fryer, I can make toast obviously, cereal, flapjacks, heat frozen pizza but otherwise not much. I have never actually made my own omelet. I will practice that one.

Any advice on simple meals to learn before I move out?

start with stir frys and stuff like that. they're fairly straight forward and tasty. Get a few basic spices and herbs lined up, dont go and buy every damned thing you see, just a few will take you surprisingly far. Onion salt, paprika, basil, parsley, thyme etc.

Lived on my own for school. It's all about the batch cooking.

Find some easy comfort food that can be made in large batches and freeze it down in single portions. Rotate a different recipe every week (Sunday was my grocery-shopping/cooking day) and by 3 weeks in, you should have enough frozen dinners that you don't have to eat the same thing every night.

Examples: Chili, lasagna, shepherd's pie, a couple of stew recipes.
YMMV. I went to school somewhere VERY cold.

For veggies, I second the stir-fry idea. When lazy, I just blanch some greens and dump sauce on them.

I'm not a fan of stir-fry. I used to be a 'foods cant touch each other kind of guy'. I recently discovered I love idian Curries though, but I think they are hard to make.

Also I love rice from Asian restuarants, its has so much flavor. My own attempt at making rice left me with a wet mushy mess without falvour. Do ricemakers really work?

Yeah ricemakers work but fairly bulky for what they do, I've found the best way to get perfect rice is the microwaveable ones essentially just a high sided plastic tub, add rice and twice the volume or water, microwave for 10 minutes or until the water is gone and voila perfect rice.

I've tried these and can never get them to give good results.

I'm a big fan of those machines that work by applying heat and pressure from fingers to buttons and then a persona appears at your door a short time later with food, which can include perfectly cooked rice!

Making rice is like baking - as much if not more science than art. And brown rice (to me) is like rocket science cause i can never get it down consistently. Just gotta use the right amount of water

But white rice is easy - get your preferred box of rice (i like long grain texmati / basmati), put a cup of rice in the saucepan w/ the required amount of water (use whatever it tells you to on the package), bring to a boil, give it one stir, then reduce to a simmer and cover it and DO NOT touch it until it is done. You can peak under the lid after 10-15 minutes (again however long it says on the box) to see if it as done as you want. Also dont forget to season (add salt) before you bring to a boil. But overall you just have to measure things out so you have the right ratio of rice to water.

Pro tip - mince garlic and onion and sautee in a tablespoon or so of butter in the same saucepan you’re cooking rice, then add the rice. Can also sub out the water for chicken stock, much more flavor.

Cause - you want to know how to make pilau rice, send me a PM. It's really easy after a bit of practise. The trick is to put the dry uncooked rice into the oil and spices and coat every grain with fat. Then add double the volume of boiling stock, bring to the boil, turn off the heat and leave for 30mins to 1 hour without touching it. Fluff it with a fork and ba-da-bing. I could eat it by the bucket full.

The only rice makers that seem to be any good are the Japanese ones with what's called 'fuzzy logic' which enables them to cook any type of rice well. They're pretty expensive though. I'd use it every day if I could get my hands on one.
So that's the story. And what was the real lesson? Don't leave things in the fridge.

Man, my grandmother (who was half Japanese), would spit nails if anyone suggested using a rice cooker. She could cook any consistency of any kind of rice in a saucepan with water. It was completely insane. Her rice was always incredible and perfect.
