Soon I shall be eating roast chicken, roast duck, roast potatoes covered in the juices and fat from both, and whatever green crap my co-chef wants to mess up the important parts of the meal with.

Vegetarian Shepherd's Pie
Hearty and delicious! I have surprised many carnivores with this recipe.

2 medium-large starchy Idaho potatoes, peeled and cut into chunks
1-2 parsnips, peeled and cut into small chunks
Salt
2-3 tablespoons prepared horseradish (I'd flavor to taste, some people aren't big horseradish fans)
1/2 cup milk
1 cup extra sharp white cheddar
Freshly ground black pepper

2 TBS extra-virgin olive oil
2 large portobello mushroom caps, wiped clean, gills scraped, and chopped into bite-sized pieces
1 sprigs fresh rosemary, leaves finely chopped
1 large carrot, peeled and chopped
1/2 medium-large onion, chopped
2 cloves garlic, chopped
1/2 small bundle kale (any variety), stemmed and thinly sliced
A few grates nutmeg
1/8 cup braggs or worcesteshire sauce (worcesteshire sauce is NOT vegetarian)
2 cups vegetable stock
2 tablespoons butter
2 tablespoons all-purpose flour
* available in soup aisle of the supermarket

Method:Put the potatoes and the parsnips in a medium pot and cover with water. Bring to a boil, over high heat, then salt the water and cook until the potatoes and parsnips are tender, 15 minutes or so. Drain and return the potatoes and parsnips to the hot pot. Add the horseradish, milk, salt and pepper, to taste, and mash to desired consistency. Stir in 1/2 cup of the cheese.

Meanwhile, heat a Dutch oven or large skillet over high heat with extra-virgin olive oil (4 turns of the pan). Stir in the carrot and onion and season liberally with salt and pepper, to taste. Cook for about 10 minutes or until onions are translucent. Add the mushrooms, and the rosemary leaves and cook for another 5 or 10 minutes or until tender. Stir in the garlic and the kale and season with nutmeg. Cook until the kale wilts, about 2 minutes. Stir in the Worcestershire sauce or Braggs, and the vegetable stock and bring to a boil. In a small skillet, over low heat, melt the butter, whisk in the flour and cook for 1 minute, then stir it into the sauce to thicken. Transfer the vegetable mixture to the individual dishes or large casserole. Top with the mashed potatoes, sprinkle with the remaining cheese, and brown under the broiler for 2 to 3 minutes. Remove from the oven and serve.

My mums vege one was always made with kidney beans, veges and tomato based sauce :p

My dinner tonight was mung-dahl and curried veggies:

1/4 cup mung dahl peas (split)
1 cup water
fresh corriander

cook peas in water until mushy, add roughly chopped coriander

Veges
tumeric, cumin, coriander, chilli powder
coconut cream

cook veges until just tender in a small amount of water unlidded, if any water left, drain then add spice and coconut milk and heat over low heat for 1 min

twas yummy and nice and simple

Breakfast was chocolate cream oreos followed by finishing off the tub of double chocolate custard. ;)

Couldn't find a pic of the first ones (and I had already eaten the all the ones in the house) so think of the cookies as like the following except it doesn't have the top vanilla layer and extra biscuit layer. Basically like I said, an oreo with chocolate cream. OMNOMNOM.
