I've been too busy to cook for the last couple of months. It's my favourite passtime so hitting the kitchen hard this long weekend. I made Prawn Gyoza in Friday night. Surprisingly easy and makes you realise they make about 300% profit in restaurants. I'm in the wrong business, damnit.
Today I'm making 4 kinds of brandy truffle: plain, almond, ginger and chocolate coated. Easter eggs are banned this year, homemade chocolates ahoy!
Also making an Italian feast - antipasti, parpadelle cinghiale, pear walnut and dolcelatte tarts all washed down with a nice Chianti from our trip to Tuscany and capped off with my homemade petit fours. Ah gluttony. Need to get in the kitchen but Mr PigDog is experimenting with eggs Benedict for breakfast

Okay, I tried my hand at cooking "White Velvet Soup" as per the instructions linked. Sadly, either my conversion of Fahrenheit to Celsius was incorrect, OR the instructions weren't for a fan-forced oven (which mine is), which, in addition to helping Luc take some stuff downstairs, may have contributed to the slightly burnt state of my cauliflower, onion and garlic. NEVERTHELESS, I have persevered in my culinary adventure and created "Brown Lumpy Goop". Delicious.

Ah, for future note, recipes are never for fan-forced unless specifically stated, take of 20 degrees if you are using fan-forced

So I got back from the physio to a nice piece of thawed beef.
I decided to make myself honey braised beef with soy sauce, red wine and steak spices. Mixed in are noodles, mushrooms, peas, broccoli and carrots. Smells awesome.

homemade brownies!
Ingredients:
Soft butter OR coconut oil, for greasing the pan
Parchment paper for lining the pan
4 large eggs
1 cup sugar
1 cup brown sugar
8 ounces melted coconut oil
11/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon sea salt
Method:
Preheat the oven to 300 degrees F. Butter an 8-inch square pan and line with parchment paper.,
Using a mixer, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
Pour the batter into the greased and lined pan. Check for doneness with a toothpick. Bakes in approximately 50-55 minutes.
As soon as you pull them out of the oven, lift out by grasping the edges of the parchment paper, then transfer to a cutting board to rest.

I´m on a 1200 calories a day-diet, so mostly just Ryvita crisp bread and chicken *shudder*
Two weddings and a week in the south of France coming up, and I have a lot of stored-up fat from this winter to shed
