The pub I just started working in has a very fair tip system - all the tips are collected together and then shared out each month based on how many hours each person has worked, in the kitchen and behind the bar. Makes good sense:) And yes, it's all on top of the wages;)

I would hate that policy. Hours worked generally has little to do with how much work you have to do. Most places I worked that did tip out the staff, back when I was in the hospitality industry, tipped out based on a percentage of sales. That gives a far better estimation of how hard you had to work.
Most places the staff gets paid to stand around Sunday though Tuesday nights, while Friday and Saturday everyone runs thier ass off for eight hours. There's no way anyone deserves the same amount of tips for working a Monday as someone who works a Friday.

Well everyone has to work all sorts of hours anyway... besides, Tuesday night is on of our busiest. And this way, people in the kitchen get part of the tip, which is the important advantage from my point of view! (Well, I work in kitchen and bar...)

I'm pretty lazy at my job (when I happen to work, which isn't much lately). But I'm efficient, so I can run circles around most lazy people.
With a nod to Brood, though...sometimes Mondays and Tuesdays could be busy for my job if it was karaoke night at a nearby bar or a convention in town or something. But in general, Mondays and Tuesdays are the least active days of the week in the restaurant business (which is exactly why bars do special events on those nights, of course, and why restaurants have free kids nights, etc.).

I like the idea of the bakc of the house getting tipped out. I was a cook a loooong time ago, and it was annoying when we got busy. The waitresses got more money, but the cooks didn't, and our workload went up at least as much as theirs.
When working as a bouncer I got tipped out from the bar, which was nice.

Well, which days are the busiest is besides the point. The slow people, whether lazy or bad at thier job, worked the slow days. One place we had a guy the boss nicknamed Turtle, guess when he worked.
Terez, I've been in the same position, where I could show up half lit and still do more work than anyone else even if I took a fifteen twice an hour. No more though, engineering takes all my remaining brain cells.
Half of my work was in the kitchen. Most places tipped out the kitchen staff based on total sales for the establishment. Still seems better to me than based on hours worked.

In the end though, if you're crap at it, you wont keep the job too long... if you're working hard enough to keep the job, you're working hard enough to get some of the tips;)

See I've seen restaurants where the Waitresses either tip out the cooks or the cooks get paid really well. SO you must have worked at a shit place.

LOL. I used to love Pizza Hut breadsticks when I was a kid. I'd beg my parents to take us there just for the breadsticks.
It's nice not to have to depend on tips anymore...but I still get them every now and then

On the other hand, when it's slow, they don't make shit, and you're still getting full pay.
The restaurant I've worked at all these years is shit, but they still gave bonuses based on sales for the cooks. There have been all sorts of stupid rules over the years that they've tried to use to keep from having to give out bonuses (like, no bonus if food cost is bad, etc.) but those never last long cause they lose cooks really fast when they take away bonuses.
