Yup. I am not so concerned with you attacking me, considering the cost of such an action (even though you'd quite likely win, you'd spend one turn's resources on a single hex).
The economic pay-off of the exchange is very valuable to me, and should go some way to proving I am not interested in player-on-player hostility.

I don't think you can do that - unless I'm reading it wrong, the rules seem to say that you can only remove a disc if you can't afford your upkeep, and you can (money gained factors in at the same time as upkeep).
The way I understand it is that it goes:
1. Use remaining colony ships
2. Calculate your new money, Bank + Income - Upkeep. If it will be positive, adjust it and go to step 4. If it will be negative, go to step 3.
3. Trade science for one money OR trade materials for one money OR remove one influence disc and the cubes from that sector back to your influence/population tracks. Go back to step 2.
4. Add science and materials according to your income for them. Upkeep phase done!
So you can't trade for more money than you need or remove influence discs if you don't need to.
