Oatmeal, 2 eggs
PWO Shake (1 banana, 1 scoop whey, 1 cup oats, whole milk)
Microwave Meal w/ beef and broccoli.
Turkey, Chicken, 2 eggs
Whatever I make for dinner.
Greek Yogurt with Whey before sleep.

That's my daily meal plan.

I made oatmeal with bananas for my daughter and me for breakfast-(not the instant kind-which is good stuff). For dinner I will make make turkey burgers with fresh pico-de-gallo, and if I can find ripe avacados some guacamole. Instead of rolls I use toasted tortillas.

Baked Blueberry & Peach Pancake

Ingredients:

1 tablespoon coconut oil
2 large eggs, separated
1/2 cup vanilla almond milk
1/2 cup all-purpose flour
1 tablespoons sugar
1/2 teaspoon vanilla
Handful of blueberries (fresh or frozen)
1 peach sliced
powdered sugar (optional)

Instructions:

Heat an oven to 425°. Place 1 tablespoon of coconut oil in a deep 9-inch pie plate, then put it in the oven to melt.

Beat the egg whites until stiff. In a medium mixing bowl, beat the egg yolks with the milk, flour, sugar and vanilla.

Fold the egg whites into the batter. Remove the pie plate from the oven and pour in the batter. Arrange the fruit on top.

Bake for 15-20 minutes, until golden on top and a cake tester or toothpick inserted in the middle comes out clean.

Dal Fry and damned it was yummy... No pictures tonight, I was too hungry to pause and take any.

Ingredients
    For the Lentils
  • 1 cup yellow lentils
  • 1/4 tsp Turmeric
  • 3 cups Water
    For the Seasoning
  • 2-3 tbsp coconut oil
  • 1 small-medium Onion (about 1/2 cup), chopped
  • 1 med-large Tomato, chopped
  • 1 tsp Cumin Seeds
  • 1-2 Dried Red Chilies, or to taste see Tip
  • 1 inch grated Ginger
  • 1-2 cloves grated Garlic
  • Curry Leaves and Cilantro to garnish
  • Lemon Juice to taste
  • Salt to taste
You can either soak the lentil in water for 1-2 hours and then cook over stove top or simply use a pressure cooker. If you are planning the soak and cook method, I would suggest using the water used for soaking for cooking too. Start with 2-1/2 to 3 cups of water for cooking and then add more later if required. I soaked my lentils for 2 hours, then cooked them on the stove-top in 3 cups of water.


While the lentils are cooking, heat a pan. Add the coconut oil, then cumin, chillies, ginger, garlic, onion and then salt. Add the tomatoes once the onions look clear and tender. Add to the lentils. Salt and add lemon juice and cilantro to taste.

Tuna stew with dill and pasta, simple, easy and you get truckloads of it :)

The stew base is milk and flour, dont ask for the exact measurments i freestyle everything. heat it until it starts to thicken add salt, pepper, tuna and the dill
Takes about 10 minutes total for the stew. no pictures since i cant be bothered right now, but it looks kinda like lumpy porridge with green short strings.
