Toc the Younger is another good one.
(Jen'isand Rul, the Wanderer within the Sword)
'I am the Shield Anvil.' I am Fener's grief. I am the world's grief. And I will hold. I will hold it all, for we are not yet done. <Itkovian>
'We are not born innocent, simply unmeasured.' <Hull Beddict>
'Because a god visits her, Fist. He comes to break her heart. Again and again.'<Nether>
'Fucking dragon.' <Fiddler>
Take my breath. But not this one, not this one. <Apsalar>
'Aye.' It's a good word. I think. More a whole attitude than a word, really. With lots of meaning in it, too. A bit of 'yes' and a bit of 'well fuck' and maybe some 'we're all in this together.' So a word to some up the Malazans. <Sunrise>

No order:
Quick Ben - I liked him a little better when he was more of a behind the scenes guy, and we didn't really know how exactly how strong he was, but still a very good character.
Kruppe - What's not to love? Everything about him is hilarious.
Fid - A man who's very powerful and a good leader, but he's really reluctant about it. I like that he wishes he was just another soldier again, instead of this powerful reader of the deck and a legend amongst the BH.
Coltaine - I think the fact that we never get a PoV of him, and SE just shows him through other character's eyes makes him all the more awesome. He's the stuff real legends are made of.
Icarium - He's such a nice guy, especially considering he's the most powerful being on Wu and could likely wipe out all life on the entire planet. His obsession with time, his memory loss, and his companionship with Mappo make him a very interesting character to read. I hope there's a little more focus on him in tCG since DoD kind of just teased us with his presence before having him disappear again.

Most powerful? I guess that depends on how you define it. Personally I'd go with Gumble for that superlative.

1. Hedge x 5. And more Hedge.
Ok, fine... uh.. Rake, Bugg, Kruppe (including his narration in TtH, wanna fight about it?), Gesler/Stormy.

Huh! Hard to pick just 5, as almost all kickass, so i'll just try to put them in order of who i want to know more about....and read about....yeah...
1. Fiddler
2. Kallor (really curious as to his whole entire backstory/origin that we'll most likely never get to find out about, the "whole" story anyways. Evil? Sure! Yet someone who really piques my interest, at least in the simple fact of how a single human dude could fuck so much shit up and scare damn near everyone in the prehistoric Wu universe, be the cause of an insane god being wrought upon the world, and still manage to scare folks in present day Wu. Bad-fucking-ass!)
3. Telorast/Curdle (technically they are one character, via that weirdass "DOD spoiler that i still don't understand but still intrigues the holy hell out of me thing!")
4. Dassem (would have put him much higher, [right under Fid], but he seems to be becoming more one-dimensional as this series moves on. Still, a great character for now)
5. Bottle (seems to have almost as much intrigue about him as QB, and about the same reluctance. Seems more a relatable soldier type, than a High Mage in hiding type)

Your right it's hard to pick just a couple when every character in the series is unique and new. I don't think I have come across this many strange and awesome characters before in anything I have read. They are all so DIFFERENT.

Karsa - He's a badass. Very complex, has developed nicely, and when he's mad there aren't many that can go toe to toe with him.
Shadowthrone/Cotillion - I list them together because they make a great team. I think they're ultimate ambition is to rule all the Gods, but it's hard to say. They are involved in almost everything, they got a rise from Killy, and are always several steps ahead of everyone.
Quick Ben - HE BEAT DOWN SILCHAS RUIN! AND BEFORE HE DID THAT HE TOOK DOWN 3 SOLETAKEN DRAGONS!
Kalam - The fight scene in tBH at the end was epic. I want SO badly to pick people and slam them on their heads to cave in their spines! I know that he'll ascend, I'm waiting to see what form it takes though. Sadly I dont expect to see it in CG. Waiting is always the hardest part.
Bugg/Mael - He's a goofball with a bad temper that occasionally snaps and sends people to his realm. Thats when you go, oh yeah, he's an Elder God!
Those close to making the cut... Rake, Mok, Fiddler and Pust.

Ranked:
1. Shadowthrone / Kellanved
2. Quick Ben
3. Pearl (the Claw, not the demon)
Out of most of the other characters throughout the books I couldn't decide whom I liked more, there are so many, but right now honourable mentions to the following, in no particular order: Fiddler, Hedge, Mael, Hood, Pust, Tehol, Tayschrenn, Bauchelain, Silchas Ruin.
Would be easier to list those I do not like.
