There really is a lot of great fantasy characters out there. just reading all the lists would made me remember different ones but my favs are:
Sam Vimes and Om-Pratchett
Tyrion and Sander Clegane-Martin
Druss, Rek and Tenaka Khan-Gemmell
Silk-Eddings
Tawl-J.V Jones
Jimmy, Eric and Arutha-Feist
Fiddler and Duiker-Erikson

I thought some of the ASOIAF characters were rather non-descript or boring. I really liked Tyrion, though.

And all the chars from Small Gods by Pratchett.

In the MBotF, definitely Paran and Itkovian. Otherwise, Bellis (from 'The Scar'), Mat Cauthon are two that spring immediately to mind. I'll think of others over time

I'll caution you that the the video release of Merlin is hacked-down considerably from the original mini-series, but perhaps the DVD has the whole thing in it's entirety.

You've read the books? Or just seen teh series? I've never met anyone who read the books as well, I personally thought they were surprisingly good, if light.
