The Silmarillion could be fun but it would probably be pretty hard to do. It's just over such a long span of time and there's a lot of characters. Maybe if they picked a few stories and did those, or a new story every season. The special effects budget would be crazy too with all the Balrogs and dragons running around.
Although I just read somewhere today that the new lotr series has a potential 5 season commitment and a possible $1B budget so there's that.
So, the Tolkien Professor, Corey Olsen (great guy, super Tolkien knowledgable!) and his small squad of students have been making a podcast where they essentially make/plan (just talking it out mind you, not with any goal to actually get it made) THE SILMARILLION into a multi-season TV show with a decent budget from the ground up including score, costuming, cast ect. I've listened to most of it, and let me say...where I would have agreed with you before on how hard it might be to do....it's TOTALLY do-able after listening with the right minds in place to make it...and especially do-able with Amazon's money.
Whether they will go back and focus on those things, or things more congruent and side-running to the LOTR and THE HOBBIT remains to be seen.
IF the did the SILMARILLION though...please get Cate Blanchett to return as Galadriel, and show her rejecting Feanor and leading the Noldor across the Helcaraxe....pretty please?! If Ian McKellen said he'd return (oh gods...just imagine them showing his Valinor-age relationship with Nienna? Heartbreaking), then why not Galadriel, considering at like 80,000 years old by LOTR she's the second oldest elf in Middle Earth.
Always, I have hopes they do SILMARILLION era stuff....it's such a rich tapestry. Hell, just the Elvish battles against Morgoth are worthy....to say nothing of the Children of Hurin.
