I feel like I have no oversight at work and this bugs me. I am a PhD and I should be able to work on my own and I have been. However in 7 months working, no one has really checked on my progress, looked at my work,, questioned what I am up to, asked me if I need anything etc. Its nice to be trusted like this but it also feels like I am adrift. I made one mistake early on because no one would double check my work,which I asked them to do since it was a new technique for me and would have taken 5 minutes for someone to do so. Their is also no teaching culture which is unusual for me since I am fresh out of the university scene. No one will take five minutes to go over new equipment with me which results in simple errors as I adjust from the equipment I know to the quirks of the different equipment my new lab has.

It sounds like you need to hunt down these things for yourself. Ask someone to look at your progress. Organize a meeting with your boss to give a status update. Ask a colleague to do a double check of your work. Figure out whom you're supposed to deal with if you require anything and so on. Often in business environments you will be expected to work these sorts of things out yourself.
Ideally all this should have been provided, especially the teaching, but the more specialized you become the less you get of that sort of stuff. At least that's my experience.

Also avoids the moment when someone decides to pay attention, dislikes what you've been doing, and adds a lack of accountability to the shit list. They can't say you didn't tell them if you told them and sent a follow up email telling them what you told them.

You doing a post doc academic job or job job? If it's the former then it's pretty standard by my experience unless you go to a lab where the boss/lab manager is into micromanagement. If it's a job job then sounds like they take the academic approach. Be a bit pushy but if nobody cares don't sweat it.

It's the 8th of April... so, and excuse my French, WHY THE FUCK IS IT ALREADY PUSHING 30°C?! And why the fuck is every fucking idiot you meet on the street puzzled at the idea of this not being season-appropriate weather? Or the outlandish idea that someone might NOT like this weather?

Yup, the weather is hit or mis lately.
Last week they were talking on the radio about Fall like weather, I mean wtf? It's Spring for crying out loud!!!! Thursday night it even had frozen.
It has been 20'c + weather here today and and yesterday. We have enjoyed sitting outside, but what really messes with my groove is that for two evenings in a row we had to go inside/were not able to go outside and had to close the door and windows at the back because people can't BBQ.
Both times it smelled like a house on fire.

The lack of proper spring (when the ground is dry and it's over 10 degrees and we can get people to soccer practices outdoors has been slowly killing my groove for the past 2 weeks or so.
