Those horny bisexuals don't get enough love in fiction, I say! The only ones I can think of are:
Errastas - Erikson
Oberyn - Martin
Shallan Davar - Sanderson

Please, give suggestions... I could go on a very unusual rant here (trust me, you won't have heard its (EDIT: fuck you too, autocorrect) like, and you wouldn't want to hear it again after experiencing it) so give me what I want :p

Obligatory comment suggesting that just because a character doesnt state they're bi-sexual, it doesn't mean they arent.

We all know Whiskeyjack and Quick Ben were knocking boots.

Shallow was Shallow and nothing else.

I have one gay character, I don't know why he's gay. He just got written that way.

Yes, spread those cliches, we need more of them.

Anyway, Erikson actually has quite a few:

Errastas
Picker
Sculldeath
Sharenas Ankhadu
Finarra Stone
K'rul
Scillara
Felisin Paran (though that may be situational/survival instinct)

From other authors there's also:

Second Apoalypse: Cnaiür

The Witcher franchise: Ciri, Triss

The Wicked Years: Elphaba, Liir

Cal Leandros series: Robin Goodfellow (though that's more like "anything that moves AND doesn't")

Southern Reach Trilogy: Grace

River of Teeth: Houndstooth

Stone Dance of the Chameleon: Fern

Sorcerer of the Wildeeps: Demane

Realm of the Elderlings: maybe/maybe not the Fool

There's probably at least one in the Terra Ignota series, though I keep getting confused with who's what there.

There's something like a whole subgenre of authors who include LGBTQIA+ characters in their books a lot, e.g. Elizabeth Bear, N.K. Jemisin. As a general rule, you're probably going to have more luck in either novellas or less publicized works.

I don't remember if Shallan is really bisexual, or if she just has a woman crush on Jasnah. Sanderson has commented on it before but I can't find the quote.

In Alex Marshall's Crimson Empire series, pretty much everyone is bisexual or gender fluid.

The Machineries of Empire trilogy, which I'm currently re-reading, has a few, though neither sex nor romance are particularly central to the story so if that's what your after it ain't the one.
I can't carry it for you, but I can carry you.

I should mention this book more often since it's one of my all-time favorites:
The Man Who Fell In Love With the Moon by Tom Spanbauer

It's a frontier-town Western with a touch of magical realism about this semi-orphaned, biracial, bisexual boy named Shed who works for a hotel/brothel owned by the town mayor. Don't read the description on Amazon or the back of the book because they give away some key plot points for some reason (I guess in the literary world theme is more 'important' than plot, but this book is bountiful in both regards). It's one of those books I've given as gifts to multiple people over the years and it's always well-received. And to be clear, it has a lot going on (including, you'll be pleased to know, action and violence), but sex and sexuality are not incidental.

Also one of my favorite book covers.
Spoiler

They came with white hands and left with red hands.
