It actually didn't occur AS he was turning. He was still well in the good/Hero mold when she left. The story is pretty simple. Jedi Master (and Council Member) Luminara Unduli's padawan Bariss Offee (she's in ATOC, and on TCW and was Ahsoka's close friend for a time) is corrupted by her own growing feelings of distrust of the way the Jedi operate....so she orchestrates a bombing of the Jedi Temple and frames Ahsoka for it. The Council doesn't believe that Ahsoka is innocent, and gets within a hairs breadth of finding her guilty and executing her...before Anakin confronts Bariss (after suspecting her) and convinces her to confess, saving Ahsoka. Anakin finds Ahsoka leaving the Temple and asks why since she was exonerated...and Ahsoka expresses the same distrust of the Jedi Council who she finds are blinding themselves to obvious threats and stagnation of their rule-strict structure...and quits. Anakin reveals that he KINd of agrees with her, and she should stay with him and together they can help try to change the Jedi Order for the better....but she refuses and leaves anyways. That's the last time he sees her and she him, until she "senses" him in Vader on REBELS (Season 2?). In the interim she did a few things (AHSOKA book by E.K. Johnston) to distance herself from the order (and keep herself safe after Order 66 came down), including hiding under assumed names like Kanan did, and Rex helping her stage her own death (leaving her old Jedi lightsabers at the supposed grave site; which is why she has two new ones on REBELS that are white-bladed). She has no idea that he is Vader during all that time. In fact she assumed he died under Order 66 with all the other Jedi.
Anyways, glad you're enjoying. It's really such a solid show throughout, and never stops being inventive and enjoyable. You will come to (if you haven't already) CARE for this team of characters.
