Be sure to bring sealskin coats back to all your friends and family. The maple syrup spas are to die for, although they can be a little hard to get out of on a cold day everyday. July? You may get a day or two above -10F, so bring your shorts (or you'll look out of place).

You definitely want to drive 16 hours to Fredericton New Brunswick.
We have a front street with like twenty stores (YES, TWENTY)
There is a mall with at least one good store in it at all times.
We have a lake where you can skate if it is cold and swim if it's warm.
A river bisects the city and separates the crappy part from the good part (so you don't get lost too easily).
We have at least a half of a half of a dozen good bars.
All the walking paths in town are paved so you don't get your shoes too dirty while jogging.
Driving no more than 15 minutes in any direction from city hall puts you in the woods - YES, REAL 2nd GROWTH REPLANTED SOFTWOOD FOREST. HOLY SHIT.
Best part: I live here...and who the fuck wouldn't want to visit CF?
It is awesome here. Trust me.

East cost is great if you love fresh sea-food. Lobsters are espcially good, lots of history there too.

Thing you gotta remember is that Canada is TINY.
You can travel anywhere in a relatively short amount of time*, so it should be no issue seeing everything our lovely country has to offer!

Another question about Canada for you all, I've realised I'm going to be in Canada during canada day, what typically happens? anything I should be on the look out for in particular? I was planning on going to niagara falls that day, is this a bad idea? ie is the traffic likely to be horrendous as on public holidays in the UK?

I've never done C-day at the Falls. In theory i suppose most of the traffic will be on the Canada side, not the border, but that's guesswork on my part.
If you're coming over for something specific (museum, wineries, restaurant, moose brothel) you may want to confirm it's open, tho Niagara being such a tourist region, i suspect most things will be.
And if you're returning to the US that night, be careful as fuck on the road. Niagara gets an influx of underage (in the US) partiers on Canada Day who (try, poorly, to) drive back at night.
All that aside tho', have fun. It's a crazy party in most places.

I like Canada Day. It tends to be pretty family friendly fun for the daytime, then fireworks at night. Some locales will emphasize drinking more than others, but since I don't really drink, I can't comment much about that. Generally, there's something for everyone. Most cities will have a parade and a festival with free concerts and dance demonstrations somewhere. I remember they did the free birthday cake in Edmonton too. Public transit is the way to go. In most Canadian cities, I find it's not the traffic that is the problem. It's the parking. But I have an particular aversion to looking for parking and getting gouged for it. It should be a good day to visit. Everyone's pretty happy and in a festive mood, so it should add to the atmosphere.
