If anyone has read the manga Eden: It's an Endless World, there's pretty amazing fight scene in Vol. 4 that has such realistic moves and set up that you can recognize actual wrestling moves being done.. and the flow is awesome. It's a much-needed emotial high coming right after the ending of Vol 3. and it manages to teach us about the character's motivations and background at the same time. impressive!

Blade of the Immortal is chock full of great one on one fighting. Especially Maki's 'dance' in one of the later vols. It's spoilerful so I'm not going into more detail..

Uther Doul's fights in The Scar. all of them pretty much.

Lemminkäinen vs. Lord of Northland in Kalevala (may have historical origins, who knows).
Superman vs. Captain Marvel, in Kingdom Come by Ross/Waid, beautiful!
Conan the Barbarian vs. Baal-Pteor, the Strangler of Yota-pong, Howard's Shadows in Zamboula.
To mention but a few.

Crouching Chicken Hidden Egg (once on the bamboos and second in the armory)
Three Musketeers (with Gene Kelly)
Matrix part 2 (Only because of the "hmm, upgrades" line at the beginning of the movie)
