When I was doing my EXPLORE French immersion stint in La Pocatiere (a small town about 100 clicks east of Quebec City on the St Lawrence river), we had a poutine place across the hall from one of the 2 clubs in town (the population was Mayne 5 thousand people, maybe less).
That place stayed open till 4 AM every night- the last place to close in town.
They served salad bowls of poutine. With bacon. And other deliciousness.
I don't think I'll ever forget that food.

Well, though they have like 50 types of poutine available, no one would really say that La Banquise offers anything that is gourmet style.
For something special, I highly recommend the filet mignon poutine from Moishes. It's a thing of beauty.
The fois gras poutine from Au Pied de Cochon also gets rave reviews.
