Hi, can someone tell me when and where in this series exactly does Baudin take the role of high house death. Thanks.

Baudin is Knight of High House Death exactly when and where is unclear but i happens after he is burned alive killing the sole taken in book 2. Hood probably saw his potential as a ex-talon as Hood didn't currently have a knight due to Hood betraying Ultor

As per above, during the conversation between Pearl and Lostara, when they find the bodies of Kulp and Baudin, Pearl states that Hood himself visited the site and collected Baudin's soul.
During Memories of Ice, we find out that the Gidrathi soldier who is helping with the Mhybe cannot release his swords remembers flames, etc. They are both concurrent events between the two books, so when you read the section in MoI about that soldier, that is when it happens.

Doesn't Itkovian have a vision of Hood coming for Baudin at some point during Memories of Ice? I'm almost positive there's a scene where we see Hood come for Baudin at some point or another (although it doesn't make it clear that it's Baudin at the time). Or maybe I'm just mashing scenes together in my head.

I would say that Baudin has shown up only once as the knight of Death, as stated a few posts above while helping the Mhybe. But not wanting to spoil, only will say that there is something odd at the Knight of Death and Soldier of Death thing.
