Actually the one I love the most is the one between Rake and WJ. You know the one about the river and the differences between them. I would quote it but unfortunately I have my MoI copy in Italian and I'm sure I would ever get it right if I try to translate it.

my favorite quote is when Silverfox is talking to the Imass and Krupp keeps butting in... theres a moment where she pauses and he breaks in only to be yelled at and he responds with somthing along the lines of .... im sorry resume your hesitation.

Just finished Memories of Ice today and this is my first post here, but one of the quotes that really stood out to me was by Itkovian late in the book when he said:
