I'll answer your question with two:
Is there a High House Death anymore?
If yes, is it not likely to have massive changes in its structure?

Trouble arrives when the opponents to such a system institute its extreme opposite, where individualism becomes godlike and sacrosanct, and no greater service to any other ideal (including community) is possible. In such a system rapacious greed thrives behind the guise of freedom, and the worst aspects of human nature come to the fore....

Presumably yes just because Hood is gone doesn't mean the house will no longer exist. Shadow was empty for a while but it was still there till kellenved took over. Might not play a significant role for a bit but likely still there. Also aren't the bridgeburners now guardians of the dead?
Secondly yes there will be big changes but do you mean in structure or the titlles will change?

It has been proven beyond all reasonable doubt that the most powerful force on Wu is a bunch of messed-up Malazans with Moranth munitions.

What is Iskar Jarak's role in HHD? Brukhalian? Dujek? Bridgeburners? Armies?

not sure they have any... i think they were just the most powerful souls in hood realm, Bruk, Duj and their armies just happened to be the most kickass recently dead. and remember the bridgeburners are part of HHWar now, guardians of the dead an all that, ascended in their own right.

And yet, they are in charge of Hood's (no longer his really) Gate, as far as I recall. It's what allowed Iskar Jarak to ask for the 14 undead Jaghut to come out and help out Kalyth and the Che'mailes.

Is Whiskeyjack now Lord of the Dead or just the combined armies of the dead? Also now that everyone keeps refering to him as Iskar Jarak does this mean his name has been tranferred into an honorific? As in the next person to replace Whiskeyjack will be called Iskar Jarak Lord/Commander of the dead?

His name has changed since his ascendance. He also has worshippers.
I don't think he's going to be replaced any time soon
