In game Languages, how?

I'm trying to figure out how languages would play apart in a PnP game.

For example, in Darujistan during the siege of Pale, how would the Bridgeburners not have been attacked outright for speaking Malazan? is there a common language that can cover most of the continents?

I'm about to try running a my 1st PnP/Dice RPG. I'll be using GURPS 4th Ed as my ruleset. My concern is that they'll all want to be from different regions like Darujistan the Barghast tribes, Malaz island, Seven Cities...

My game is based around the time of the Siege at Pale and I'm basing a large part of it in Darujistan.
