The problem is, it's later noted that he is of Malazan appearance with burnished skin. So how do we match this up? If he possessed another, why does he look like himself?

Thats a very good point. Thats why I was kind of thinking that Maybe the Gildrath never was. It was, insert name here, all along in Gildrath Armor. Maybe Hood, even though he had been rejected by the Grey Swords, had his man close to protect Itkovian. I know thats sounds silly but...
I have seen things you people wouldn't believe. Attack ships on fire off the shoulder of Orion. I watched C-beams glitter at the Tannhauser gate. All those moments will be lost in time, like tears in the rain...."

I figured that insert-name-here didn't posess anyone but was sent into Capustan himself as a Gidrath under Rath'Hood, who may or may not have totally known the extent of his new visitor. The reference as a Gidrath is more-or-less assumed as he is wearing the armor and accoutrements of the Gidrath so thats how the grey swords refer to him, regardless of the texture of his skin...

I kinda love it when D'rek unleashes her nerd wrath, as I knew she would here. Sorry innocent bystanders, but someone's gotta be the kindling.

Agreed. I was trying to say that, but much less clearly than you...

Pg. 689-691

"The warrior, who Coll now saw was wearing the remnants of Gidrath armour, swung to face him."
...
...

"No, I was not Gidrath. Not Capan. I am not, I think, from this continent at all. I do not know why I appeared here. Nor how. I have not been here long. This is as my master wills. Of my past, I recall but one thing."

...
...
...

"I once stood within fire."

So no, he was not a Gidrath, he just had the remnants of Gidrath armour. And it states that he has not been there long.
I have just started reading Steven Erikson (And have not finished reading MOI) but it is clear who he is. Just remember back in the previous book and you will know.
There are other statemenets, but I dont wanna write them all down hehe.
