Elves are proving a bit problematic... How do you make them non-stereotypical?

How about bored and sadistic? Having lived forever nothing would hold the wonders they once did, even humans, from infancy to elderly look at the loss of wonder. Oh and maybe call them something other then elves, give them a different name and alter their appearance slightly, like their skin colour, or maybe try fat elves that could be amusing.
sometimes I wonder if the gift of revelation, of discovering the means underlying humanity, offers nothing more then the devastating sense of futility, it is the ignorant who find cause and cling to it, for within that lies the illusion of significance-steven erikson.

Hmm. I think the Warlord RPG line (might also be called something with Accordlands, once distributed by AEG) portrayed Elves as sadistic, incredibly short-lived (25 to 40 years max) necromantic magical beings with a caste system. Cruel, nasty bastards. Not exactly evil, mind you but more - different. Their own value system is hugely different from that of others.

i think your best bet is to take your idea, run with it, then decide whether you still want to call them elves or not. i like your idea that they have done something to their bodies to allow their spirits to roam, but im not sure i dig the rickety, wrinkley angle. that would seem like a cage to me, perhaps they could have denigrated the physical substance of their bodies to something more... ephemereal. like they're barely being held inside themselves with some kind of thin membrane which allows the soul to escape but not their bones, blood and guts
There's a fine line between genius and insanity. I have erased this line.

Were they called elves? Because they sound more like goblins or gnolls.
